KuCoin offers many features on top of usual crypto-to-crypto trading. It supports futures trading, margin trading, fiat-to-crypto gateway, crypto lending, staking, an OTC desk, NFT trading, etc.
Among payment methods, KuCoin supports bank cards, wire transfers, Banxa transfers, Simplex, BTC Direct, and exchanging fiat for crypto via the P2P platform. Trading bots are also supported, which allows KuCoin users to earn without much involvement and take the maximum from the markets.

Both exchanges support over 500 cryptocurrencies. It is a solid selection providing users with a rich choice without including worthless scam coins. If we speak of liquidity, we should admit that KuCoin has three times bigger assets flow than CoinEx. It means that on KuCoin, you have a bigger chance that your transactions will be quick and at the price you expect.
Fees
If we speak about trading fees, KuCoin is a better choice. Both exchanges offer fee discounts for holders of specific amounts of specific coins, but the starting level of commissions is not the same. On KuCoin, you start by paying 0.1% per transaction. On CoinEx, you are charged a 0.2% fee per trade. KuCoin's fee level is one of the best in the industry.
As for withdrawal fees, CoinEx charges smaller fees than KuCoin. At least, in the case of Bitcoin, KuCoin charges 0.0005 BTC. That's quite a usual BTC withdrawal fee for the centralized exchange. On CoinEx, you are charged a 0.00019 BTC fee which is much more democratic.
Security
Both exchanges do much work to protect the users' funds. However, in the case of KuCoin, these efforts were not enough. In 2020, $280 million worth of BTC and ETH was stolen from the exchange's hot wallets. Somehow, the hacker(s) obtained the private keys from these wallets. This incident seriously harms the trustworthiness of the KuCoin exchange.
Additional features
If we speak of features on top of spot trading, we can't really prefer one of the exchanges over another. Both of them offer a rich and diverse set of features and ways to earn money via operations with cryptocurrency. These exchanges are the industry leaders for a good reason.
Availability
CoinEx and KuCoin are available globally. This is excellent news for potential users as many leading crypto exchanges cannot be accessed in many countries, including the USA and sanctioned territories. KuCoin outperforms CoinEx by most parameters. It charges smaller trading fees and has considerably more significant liquidity. These things make KuCoin a more convenient platform for trading. On the other hand, CoinEx hasn't been hacked as of yet. Probably, the CoinEx dev team has a better idea of how to protect the accounts. Safety is one of the crucial things in crypto trading. Another slight advantage of CoinEx is the smaller BTC withdrawal fees. KuCoin will probably solve the security problem in the next few years. It has a good chance of preserving its higher position compared to CoinEx.
